Miss Pearl's Tomato Papaya Macadamia Nut Salsa

Categories: Salsa, Fruits/nuts
Yield: 4 Cups
6 Tomaotes, blanched, peeled,
Seeded, and chopped
1 Papaya, peeled, seeded, and
Diced
1/2 Red Onion, diced
1/4 c Macadamia Nuts, toasted and
Chopped
2 tb Mint, chopped
1 tb Cilantro, chopped
1/4 c Fresh Lime juice
1/4 c Olive Oil
Salt and Pepper
Combine all ingredients, and adjust seasonings to taste. Best served
with grilled fish or chicken.
