Maple Candy

2 cups pure maple syrup
1 tsp. vanilla extract
Cook syrup on low heat until it starts to boil. Stir frequently. Cool 60-70 minutes. Add vanilla. Heat until smooth and fluffy. Pour into pans of clean snow or blended (crushed) ice. Let harden (won't get very hard, so don't wait for ever:)!) Serve or put in container.
