Hominy Souffle

8 servings
1 c Milk
1 c Water
1/2 c Hominy grits
2 T Butter,melted
3/4 t Salt
3 Egg,separated,well beaten
1. Scald milk and water in the top of a double boiler.
2. Add hominy grits, stirring until thickened; cook 1 hour.
3. Cool; add butter, salt and egg yolks, blending well.
4. Gently fold in stiffly beaten egg whites.
5. Pour mixture into a well-buttered casserole; bake in preheated
325'F. oven 45 minutes.
NOTE: A marvelous flavor that will be relished by all!
