Fresh Fruit Compote

2 c -Water
1 c -Sugar
1/4 ts -Salt
5 c Fresh Fruit; peeled, halved,
-or quartered
1/4 Lemon Rind
1/2 ts -Vanilla
Fresh Fruit Compote 5 to 7 hours
This is a basic recipe for cooking fresh fruits in the slow cooker. Use it
to make compote of pears, apples, cherries, peaches, plums, nectarines, or
apricots. You can make compotes of mixed fresh fruits or of a single fruit.
Use compote of pears and peaches to make classic desserts such as Poires
Helene and Peach Melba (index).
To Cook: Place all the ingredients except the vanilla in the slow cooker,
cover, and cook on Low for 5 to 7 hours. Remove the cover, stir in the
vanilla, and then chill the fruit. Makes 6 to 8 servings.
